2-3 large chicken breasts
1 (1 lb.) bag hash browns
1 can cream of chicken soup
8 oz sour cream
6 oz shredded cheddar cheese
½ cup butter
1 onion chopped

 

 

  1. Smoke chicken breast on BGE.
  2. Cut into small pieces.
  3. Using a BGE Paella Pan, sauté onion in butter, add potatoes, soup, sour cream, cheese and chicken. 
  4. Stir well.
  5. Spray bottom and sides of grill safe casserole dish 9 X 13 with olive oil.
  6. Pour into pan.
  7. Cover with foil.
  8. Bake for 30 minutes at 350 degrees in BGE.
  9. Remove foil, cover casserole with extra cheese.
  10. Bake for additional 15 minutes
